Pesto pasta

Ingredients

3 smokies
500g spaghetti
1 cup pesto
1/2 cup butter
3-4 cups spinach
1 cup reggiano parmigiano (grated)
salt
pepper

Directions

Place smokies into toaster oven at 350c for 30 minutes. While the smokies are cooking, you can boil your pasta. Just follow the directions on the packaging. Once cooked, move pasta to a collander and run cold water over it. Retain some of the pasta water for later. Take the smokies out of the oven and slice. 

Melt the butter in a deep skillet. Toss in the sliced smokies and coat with butter. Next mix in pesto and spinach. Stir mixture for a minute or so just to soften up the spinach. Toss in the pasta and make sure the sauce covers all the pasta. Finely grate the cheese over top the pasta. Add salt and pepper to taste. Serves 4 people.

I think shrimp would make a good substitute for smokies.
