Beans on toast
Ingredients:
2 slices of brown bread (or whatever you have on hand)
2 eggs
1 can of brown beans (I prefer tomato sauce variety)
mango chutney
butter

pepper
Directions:
Open can of beans and place in a bowl and heat in the microwave. Turn stove to medium heat. Place frying pan on top of the stove top with some butter in it. While butter is melting in the pan, place bread in toaster at medium to high setting. You want to make the toast crispy. Once the beans are added, they will make the toast soggy after a time. Returning back to the stove, crack eggs in the hot frying pan keeping the eggs separate from each other. Once the bottom of the egg whites have browned, ladle the hot butter over the eggs to sear the yolk a bit, but still runny. The hot butter will heat the remaining uncooked membrane on top of the egg. Remove pan from stove. By this time, the bread should have been toasted and cooled a bit. Butter and spread mango chutney on the toast. Place on plate and transfer fried egg onto each slice. Take the beans from the microwave and ladle some hot beans on top. Save the remaining beans for another day. Sprinkle salt and pepper and serve.
