Roasted potatoes

Ingredients:

2 lbs yellow potatoes peeled and quartered
3-5 tbsp olive oil
1/2 tsp baking soda
garlic
green onions
salt
pepper

Directions:

Peel potatoes and cut them into 1 inch cubes. Place into a pot of water with salt and baking soda. The baking soda will make the water alkaline and roughen the surface of the potatoes. Bring to a boil until potatoes are cooked. While the potatoes are cooking, heat up olive oil in a frying pan. Finely dice the garlic (or use a garlic press) and throw garlic into the hot oil and fry until they turn slightly brown. With a sieve, separate the oil from the garlic. Set garlic and oil aside. Once the potatoes are cooked, drain the water and let sit for a few minutes to allow as much water to leave the potatoes. Now add the oil to the potatoes and mix vigorously. You want to roughen the surface of the potatoes even more. This will allow more surface area to brown. Toss the potatoes into an air fryer and cook at 200C for 20 minutes. At the half way mark, toss the potatoes and continue to cook. Place potatoes into a bowl. Mix in the garlic and chopped green onions with the potatoes. Add salt and pepper to taste.
