Curry schnitzel sandwich

Ingredients:

French baguette
1/2 lb pork loin
1/2 cup all purpose flour
1 tsp. curry powder
2 eggs
panko (Japanese bread crumbs)
Tonkatsu sauce
salt
pepper

Directions:

Mix flour and your favourite curry powder together. Place mixture in a plate. In a fair size bowl, beat eggs. Set aside with a plate of panko.

Cut the pork loin into 1" strips and pound with a meat tenderizer until flattened. Season with salt and pepper.

Coat surface with flour mixture, then dip in the egg and lastly cover with panko.

Set heat to medium and add oil to frying pan. Throw the pork into the pan and cook each side for about 7 minutes. The time depends on how thinly you flattened the pork loins.

Take the baguette and slice in half. Place the cooked schnitzel on one half of the baguette. Drizzle ample amount of tonkatsu sauce and mayonnaise on the schnitzel. I also added some arugula, but I think shredded cabbage would have been better.

This sandwich would go nicely with some potato salad and a glass of cold lemonade.
