Eggs Napoleon

Ingredients:


3 Eggs
4 Mushrooms, sliced
1/2 onion, diced
French bread, croutons
2 tbsp. butter
Feta cheese, crumbled
Parmesan cheese
Kosher salt
Pepper

Direction:


Saute onions and mushrooms in butter over medium heat. Throw in croutons and toast.

Preheat oven or toaster oven to 375F.

Butter the surface of a shallow baking dish. Add the onions, mushrooms and croutons into the dish. Sprinkle cheese over the mixture evenly. You can use whichever cheese you like. It doesn't have to be Feta or Parmesan. 

Make a minor depression in the middle so that the eggs gravitate to the center of the dish. You do not want the egg yolks to roll to the side of the dish as this will cause them to overcook. Bake for 15-20 minutes.

Remove from oven. Sprinkle salt and pepper. Serve with a salad.
