Red Curried Prawns

Ingredients:

1-2 carrots, thinly sliced
1-2 sticks of celery, thinly sliced
1/2 onion, sliced
4 tbsps of butter
2 lb shrimp, peeled
2 heaping tbsp red curry (red cock brand)
1 can coconut milk (arroyo)


Directions:


In a large skillet, add in butter, carrots, celery and onions. Cook at medium heat. Add curry and cook for a few more minutes until the curry has fully blended into the mix of vegetables.

Add shrimp to the skillet. The shrimp will not take long to cook. Add coconut milk and simmer for a few minutes.

Serve on a plate of rice.
