Ingredients:


1 finely chopped large onion
4-8 slices bacon, chopped 1/4 inch
1 (3-pound) head red cabbage, cored and shredded very thinly
1 teaspoon caraway seeds, or more to taste
1/4 cup white vinegar (or balsamic vinegar)
1/2 cup water
1 teaspoon salt, or more to taste
1 teaspoon sugar, or more to taste
Freshly ground black pepper


Directions:


In large skillet or Dutch oven, fry up the bacon. Remove the bacon from skillet and saute onions in the bacon fat until they are transparent and lightly coloured. Add cabbage and caraway seeds. It is important to fry the cabbage so it caramelizes before you simmer in the skillet with the liquids. You may have to add a handful of cabbage at a time until they reduce. While frying leave the skillet uncovered.  

Add vinegar, water, salt, sugar and pepper. Cover tightly and cook 45 minutes to 1 hour over low heat, stirring occasionally, until cabbage is done to your liking. You can cook it longer if you prefer the cabbage softer. Add water if necessary.

Goes well with pork or duck.
