Coconutty Lentil Soup

 

Ingredients:


30g butter
1 medium onion, chopped finely
1 teaspoon grated fresh ginger
1 clove garlic, crushed
1 tablespoon (heaping) chili powder or 1 birdseye chili
1/2 teaspoon ground cardamom
1/2 teaspoon ground turmeric
1 cup red lentils
3 cups chicken stock
1/2 cup coconut cream
1 cup water
1 tablespoon chopped fresh coriander leaves

Directions:


Combine butter, onion, ginger, garlic, chili, cardamom and tumeric in a large skillet and fry until onions are soft and the spices infuse. Stir often. Add more butter if desired.

Add lentils and chicken stock to the onions. Cook 20 minutes until lentils become soft and break down into a mush.

Stir in cream and then water. Use a whisk to blend making the soup into a smooth texture. You can also use a blender to achieve a smoother texture.

Goes great with bread and butter!
