Bangers and mash


Ingredients:

6-8 pork sausages
5 medium sized yellow potatoes, diced in 1" chunks
2 cups of frozen green peas
1 yellow onion, sliced
30 grams butter
1/4 cup milk or cream
1-2 tbsp flour
salt and pepper to taste

Direction:

Although simple to make, this recipe requires some orchestration to ensure everything is ready at the same time. 

Toss potatoes in a pot of boiling salted water. While the potatoes are cooking, begin frying the onions with a bit of butter in a pan on medium heat. You want to caramelize the onions. Remove onions and turn the heat to low. Begin frying the sausages. 

While the sausages are slowly browning in the pan, check the potatoes. Transfer the potatoes from the pot into a bowl making sure not to discard the water. Add butter and milk to the bowl and mash the potatoes until creamy. Set aside. At this point, you'll want to place the peas in another bowl and heat in the microwave. 1-3 minutes should suffice, but check the instructions on the bag.

When the sausages are browned to your satisfaction, remove from the frying pan. You're going to make gravy from the drippings. Start with the roux by adding flour to the pan. As a general rule of thumb, 1 tbsp of flour to 1 tbsp of fat. If there is not enough drippings in the pan, you can add lard. I usually keep lard in a container whenever I fry bacon and freeze it for later use. One can never have enough fat. Once the flour has darkened slightly begin adding the water from the potatoes making sure to constantly stir the mixture with a whisk to remove the lumps. You are making gravy so only add water little at a time until you get the desired consistency. Once you're happy with the thickness, add the onions to the gravy and continue whisking for a minute or so. Turn off the heat.

Apportion the sausages, mash potatoes and peas onto the plates. Ladle the gravy over everything and season with salt and pepper. This is considered comfort food in England. Consume with caution. This dish will block your arteries. The listed amount is enough for two servings or one extremely fat bloke.
