Simply Salsa

Ingredients:


24 cherry tomatoes, diced and drained
1 bunch of cilantro, chopped
1/2 white onion, finely diced
2 jalapeno peppers, finely diced
1 lime
kosher salt

Directions:

Tomatoes ripened on the vine make for a wonderful salsa. Even better with cilantro grown in your own garden. Unfortunately, cilantro and tomatoes mature at different times in our  northern climate so you'll likely have to purchase one or the other from the grocery store.

Drain the tomatoes in a sieve to remove excess liquid. Add tomatoes, cilantro, onions and peppers together. Squeeze the juice from the lime to the mix and stir. Sprinkle salt and let sit for an hour before serving. I like to serve this with lime flavoured Tostito tortilla chips. If you want a more tangy salsa, use white wine vinegar instead of lime juice.

I like the seasoning from Pace medium salsa so often I'll just add fresh tomatoes, onions, peppers and cilantro to the store bought salsa. You don't have to use too much of the Pace, just enough to give it some flavour to the fresh ingredients.
